I just ate the best apple that I have ever eaten in my entire life. No exaggeration. The perfect crisp, crunch, sweetness, tartness, size, and color. The apples in Ukraine, specifically in our backyard, are ripe and delicious and we are enjoying the bounty. Other things are ripe too. I have now participated in a full cycle and a half of potato prepping, planting, weeding, growing, collecting, and sorting and learned how to dig carrots. Yes, in fact, the latter was fairly self-explanatory and also quite enjoyable. I know I am going to miss the fresh produce once I return to America. I now have dreams of a garden that I know I would not have had I not experienced Ukraine and its bounty, specifically the significantly better tasting beets, carrots, potatoes, cabbage, squash, and melons. Soon, we will be back to eating mostly canned salads, pickled vegetables, and moldy apples, but for now I will relish in a few more weeks without relish.
